We're trying an experiment tonight, based on a pasta Scott had for lunch last week. You could easily add grilled chicken to the top.
Penne with Artichokes, Bacon and Tomatoes
1 large shallot
1 small onion
3 slices of thick-cut bacon, diced
1/3 cup artichokes, drained
1/2 cup white wine
1 cup heavy cream
1/2 box penne pasta
Parmesan cheese
Saute bacon until crispy. Remove from pan and set aside.
In the meantime, boil pasta according to package directions.
Put shallot in pan with a little bit of residual bacon grease. Saute until tender, then add the white wine and allow it to reduce. Add the cream and allow sauce to reduce until thickened.
Add the Parmesan cheese, then add the tomatoes and artichokes. Cook until warmed through. Pour sauce over pasta and serve.
